This amazing wine is sourced from 40 year old vines planted in the mica-schist soils of the Pays Nantais where the Loire river spills into the Atlantic ocean. Bone-dry with crisp acids and pure minerality, this is one of the purest, raciest shellfish partners of the world.

*The French Ministry of Agriculture developed the Haute Valeur Environnementale or HVE certification in 2001, a three-tiered system that encourages farms and vineyards to focus on increasing biodiversity, decreasing the negative environmental impact of their phyto-sanitary strategy (i.e. measures for the control of plant diseases, reducing the use of pesticides and fungicides), managing their fertilizer inputs, and improving water management. Once an operation has attained the third and most stringent level of the certification process, it is deemed worthy of the title “Haute Valeur Environnementale” or HVE.

      Folle Blanche

      Folle Blanche is a white grape variety best known for its role in producing brandies, particularly Cognac and Armagnac, as well as the crisp, refreshing wines of the Pays Nantais region in France. Historically one of the principal grapes used in Cognac, it was largely replaced by Ugni Blanc after phylloxera devastated French vineyards in the 19th century. However, Folle Blanche remains prized for its high acidity and delicate floral and fruity aromas, which include notes of apple, pear, and citrus. This acidity makes it ideal for distillation, as it yields a clean, crisp spirit with a refined palate. Wines made from Folle Blanche are typically light-bodied and vibrant, offering a fresh and lively drinking experience.
