A Palo Cortado brings together the finesse and delicacy of an Amontillado with the richness of an Oloroso. This rare wine, with its amber gold color, dryness and immensely rich flavor, has light chocolate/coffee flavors yet retains plenty of fruit. The Palo Cortado ‘Peninsula’ should be served very lightly chilled in a copita or wine glass. It is ideal as an aperitif with nuts or cheese, or as a digestif after a meal.
